Ingredients: Pale ale malt, wheat malt; Cascade hops; Wyeast 3711 yeast; water.
Saison is a farmhouse ale, traditionally brewed in French speaking region of Belgium called Wallonia. Brewed in winter or early spring months this beer would be consumed in summer by peasants working in the fields.
High fermentation temperature gives Saison it’s phenolic character. It smells like peppers, cloves and mustard all mixed together in some grainy drink.
In our version of the style we use a touch of American Cascade hops. It’s lemonny character goes well with the dry finish of the beer.
Food pairing: roasted chicken / turkey, spicy dishes, Asian or Middle-Eastern dishes.
