Ingredients: Pale ale malt, Citra hops; lemon zest, thyme; AY04 yeast; water.
Drops bar situated in the centre of Vilnius connects beer, whiskey and people of the world. Therefore our main goal for this collaboration was to find connections between refined lightness that goes along with trendy elegance and translate it into beer.
Drops bartenders could not stop talking about thyme. They love it. They use a lot of it in their cocktails and shot recipes. We paired lemon zest to it. We’ve been developing the recipe for six months. We tasted it in many different ways, changed malt, hops and yeast. We experimented with Belgian fermentation, different types of wheat. But our favourite recipe was built with Pale malt, Citra hops, and neutral yeast.
This beer steps out but is still very sessionable and drinkable. Citra hops created balanced bitterness and go very well with lemon zest. Thyme makes a statement on the nose and adds a grassy layer in the taste of this brew.
