Ingredients: Pale ale malt, Green Bullet hops, Blackcurrant berries, aronia juice, Brewferm Champ yeast, water.
This beer was brewed in collaboration with Alaus biblioteka bar based in Vilnius old town. Guys came to our brewery on warm summer evening and we discussed the details of what our beer might be. We shaked our hands and agreed on brewing something for the autumn nights. It’s hard to call it beer, it’s not totally right to call it wine, we would be lying calling it cider. Although it starts it’s way as a classic barley ale, we ferment it with champagne yeast. It leaves almost no residual sugar and creates this flavour profile that resembles dry wine. When the fermentation is over we add 50 litres of natural aronia juice and 200 kilos of real blackcurrant berries into the fermentation vessel and let it referment. The final result is rubin like purple beverage, packing extremely complex flavours. Champagne like sourness, blackcurrant skin flavour, some tannins from aronia and dry mouthfeel. It’s very special but very moreish at the same time.
